Really Raw Unstrained Honey (Really Raw Honey)
Vietnamese Extra Virgin Fish Sauce (Red Boat)
- 1 pound sweet potato, peeled
- ½ pound boneless, skinless chicken breasts, sliced into strips
- 2 eggs, beaten
- 3 tbsp olive oil
- 3 green onions, sliced
- 2 garlic cloves, minced
- ¼ tsp roasted cashew nuts, chopped
- 2 tbsp chopped cilantro
- 1 lime, juiced
- 3 tbsp raw honey
- 2 tbsp Coconut Aminos
- 2 tbsp paleo approved fish sauce
- 1 tsp chili flakes
- salt, black pepper to taste
- Spiralize sweet potatoes into noodles.
- In a small bowl, mix lime juice, Coconut aminos, fish sauce, chili flakes, and honey. Set aside.
- In a pan, heat 1 tablespoon of olive oil over a medium heat.
- Add in sweet potato noodles and season with a pinch of salt and pepper.
- Cover and cook for 5 minutes, stirring occasionally, until noodles are soft.
- Remove the noodles and set aside.
- In the same pan, heat 1 tablespoon of olive oil over medium heat.
- Add the eggs and cook, scrambling with a wooden spoon until cooked. Set aside.
- In a pan, add the remaining oil and heat it over medium heat.
- Add chicken and cook for 5 minutes, stirring, until it is thoroughly cooked and no longer pink.
- Add onion and garlic and cook for a minute, until soft.
- In the pan, transfer sweet potato noodles and scrambled eggs, then stir.
- Add half of the chopped cashew nuts and the mixture of lime juice and Coconut aminos and
- cook for 5 minutes or until thickened.
- Remove from the heat, add chopped cilantro and the remaining cashew nuts and toss to combine.
- Season with salt and pepper to taste and serve.
