Who Doesn’t Love Fresh,Tart Desserts?
Besides the fact that this recipe is simple to prepare, I also enjoy it because I’m such a huge fan of using lemons in general. They just add so much great flavor to such a huge amount of paleo recipes. Lemons are great for making everything from chicken dishes, to lemon bars, and of course, homemade lemonade. And the best part is? They’re also incredibly good for you as well. Lemons are an excellent source of vitamin C, which is also less commonly known as ascorbic acid. Many people are surprised to learn that vitamin C is actually quite a potent antioxidant that helps protect your cells against the oxidative damage caused by harmful free radicals. (1) Not to mention how useful it is for boosting your immune system as well.
Lemons, A Great Addition to the Paleo Lifestyle
Lemons have also demonstrated a remarkable ability to help lower blood pressure when consumed on a regular basis along with a moderate amount of daily walking. (2) As you can see, there’s all kinds of great reasons to include more lemons in your diet, especially considering one of the primary goals of living a paleo lifestyle is to improve your overall health. And what better way to get all of the great health benefits offered by lemons than by enjoying some delicious lemon cookies?
The other ingredients used in this recipe are no slouch when it comes to the health department either. The almond flour adds a nice amount of dietary fiber and healthy fats to the cookies. Meanwhile, the maple syrup adds a perfect amount of natural sweetness to the mix while also boosting the antioxidant content even further.
That’s the real beauty of this lemon cookie recipe. On the surface, it’s incredibly simple to make these cookies.
