Maple Glazed Roasted Carrots

This recipe for maple glazed roasted carrots is every bit as delicious as it sounds! By adding garlic, thyme, and maple syrup to carrots that have been cut into ¼ inch thick rounds, along with just the right amount of olive oil, salt and pepper, the carrots become perhaps the ultimate healthy paleo snack. Ever since trying this out, I can’t get enough of it, and I’m confident that you’ll feel the same way.

Snacking on Vegetables Made Cooler 

Let’s take a second and talk about carrots and why they just might be the perfect healthy snacking option. They provide just the right amount of naturally sweet flavor while being absolutely packed with vitamins and minerals. They are extremely high in antioxidants, and that’s actually where they get their orange coloring from — antioxidants known as carotenoids. One such carotenoid is beta carotene, which can not only help give your skin a nice, healthy glow, but it also protects against various diseases, including cancer and heart disease. (1) Beta carotene is also a precursor for vitamin A. In fact, it’s converted into vitamin A inside of your body, where it then provides benefits for your skin, immune system, and vision. (2)

Maple Syrup – A Paleo Sweetener

Carrots are obviously quite healthy and perfectly tasty on their own. However, once you coat them in a maple syrup glaze and coat them with garlic and thyme? The combination of flavors is absolutely heavenly. As much as I love honey, I much prefer to use maple syrup as a sweetener. I just like the taste better, although they are both perfectly valid options for paleo followers that are packed full of antioxidants and nutrients. As an added plus, maple syrup is quite low on the glycemic index as well.

The garlic and thyme round the recipe out, as they each add their own distinct flavor to this snack. After glazing the carrots in the maple syrup, top them with the garlic and thyme along with the other ingredients. Bake them just long enough until the carrots are nice and tender, usually about 20 minutes or so. And once they come out? Get ready to experience healthy snacking nirvana.

I mentioned it above, but this really just might be the ultimate healthy paleo snack. I’ve never tried carrots as flavorful as this recipe makes. It literally combines a bunch of my favorite flavors into one delicious treat. You won’t believe how good this truly is until you try it out for yourself.
