Would you believe me if I told you that it’s completely possible to enjoy a savory slice of bread with all of your favorite toppings while still adhering to the principles of a paleo diet? It’s absolutely true thanks to this low carb cauliflower bread recipe. It uses a clever mix of ingredients to bake a perfect bread replacement, and then to top it all off, it’s sprinkled with a delicious and healthy mix of pumpkin, sesame, and sunflower seeds for decoration.

Thousands of people rely on bread to make a breakfast sandwich or quick lunch each and every day. Anyone following a paleo diet doesn’t have to be left out from that thanks to this low carb cauliflower bread recipe. It’s full of healthy ingredients that make it gluten-free and 100% paleo-friendly.

These Three Ingredients Make a Fantastic Bread Dough

It isn’t just processed cauliflower by itself that makes this deliciously low carb bread recipe. Psyllium husk and almond flour are two other key ingredients used. Each of them also provide plenty of great health benefits that not only make the bread low in carbs, but extremely healthy as well.

Psyllium Husk

Psyllium husk is a soluble fiber source, which means it is able to pass through your body without being broken down or absorbed. It’s great for helping to keep you regular, balancing blood sugar levels, and even helping with weight loss. (1) It makes a perfect source of fiber to replace the gluten-containing wheat found in regular bread.

Almond Flour

Almond flour is a terrific paleo replacement for regular flour as well. Unlike normal flour, the almond variety is rich in nutrients, containing monounsaturated fats, protein, vitamins, minerals, and dietary fiber as well. Almond flour has an incredibly high magnesium content as well, which helps keep blood sugar under control. (2) This is in stark contrast to refined wheat, which is high in carbs and can cause drastic blood sugar spikes.

These two great ingredients are combined with baking soda and salt, and then processed cauliflower florets and five eggs are added in. After this ‘dough’ mixture is prepared, it’s poured into a loaf tin and then the final touch is added — a sprinkling of pumpkin, sesame, and sunflower seeds. Plant-based seeds such as these are another nutritional powerhouse that comes in a tiny package. They are fantastic for your overall cardiovascular health thanks to the large amounts of healthy fats they contain. (3) All that remains is baking the bread and then you’re all set to enjoy this wonderfully low carb treat.

Paleo Meal Suggestions That Incorporate Low-Carb Bread

Now that you have yourself some cauliflower bread, you can go back to making meals that you may have given up in an effort to follow the paleo diet guidelines. Here are some possible uses:

  1. French Toast – Who doesn’t love French toast? Here is a quick and easy paleo dessert recipe that you can try making for your family.
  2. Sandwiches – Sandwiches are incredibly hard to give up because they’re so versatile yet convenient to make. Fortunately, you no longer have to make that sacrifice.
  3. Croutons – Ever had a salad without croutons or toppings? Yeah, it’s a little boring. Croutons are a staple in many salads because they add a lot of texture to a dish. With this low-carb, grain-free option, you don’t have to go without croutons in your salads ever again.

I never thought I would enjoy eating something like cauliflower bread. It’s not that I don’t enjoy eating cauliflower. It just seems like such a strange combination. After trying it out for myself though, I was completely sold. You can even customize your cauliflower bread however you’d like before baking it as well — just imagine how yummy a garlic cauliflower bread would be.
