What could be better than a big bowl of juicy, flavorful carnitas? Nothing, except knowing that they’re made without unhealthy ingredients and are all paleo-friendly. You’ll love these super easy paleo carnitas recipes! Most either use a stovetop slow cooker, dutch oven or crock pot.

Slow cooker pork carnitas is one of my families favorite meals to eat and I never get sick of it! Plus, it is set it and forget it cooking and as easy as it gets.

1. Fabulous Mexican Pulled Pork
Made with Boston pork butt, garlic, lime juice, orange juice, orange zest, ancho chili powder, dried oregano, and dried cumin, these carnitas are bursting with flavor and juicy as all get out. Enjoy them in a giant bowl with veggies and maybe some greens. So good.

2. Slow Cooker Paleo Carnitas

This blogger says these carnitas are the crispiest you’ve ever had, and that just might be right. Made with just pork butt, lard, and salt, these carnitas cook up easily in your slow cooker and are ready when you are. Stuff them in paleo tacos and enjoy.

3. Carnitas Sweet Potato Hash With Green Sriracha
This recipe is a double header, with deliciously flavored carnitas including bay leaves, onion, club soda, orange, chili powder, and more, along with an awesome hash recipe you can use to enjoy your carnitas for breakfast, lunch, or dinner. Delicious with avocado and fresh cilantro.

4. Crockpot Carnitas With Pineapple Salsa
I love a good salsa, and my favorite variety is pineapple salsa, like this one with beefsteak tomatoes, red onion, lime juice, fresh pineapple, and flaky sea salt. Pineapple salsa goes amazingly well with carnitas, so you’ll definitely want to make these recipes together.

5. Mexican Slow Cooker Pork Carnitas Tacos
You’ll want to replace the corn tortillas in this recipe with paleo-friendly grain-free tortillas, or just serve your tacos tortilla-free in a bowl. Make these carnitas with awesome flakes like black pepper, garlic powder, chili, lime, and cumin. They’re an easy weeknight meal!

6. Easy Slow Roasted Carnitas
Slow roasting carnitas helps keep the juices and flavors in, so what you end up with when they’re finished is bites of delicious shredded pork that practically melt in your mouth. This one is made with lard, orange, lime, garlic, and chipotle pepper in adobo sauce.

7. Juicy Cuban Carnitas
For this recipe, you’ll need your spices on the fresher side. Use cumin seeds instead of ground powder, and add some fresh oregano along with the dried. Your freshly squeezed citrus juice will add bursts of spunky flavor to the carnitas, which are made from a base of uncured ham steak.

8. Chipotle Carnitas
This recipe is for none other than the carnitas from Chipotle, the popular restaurant. It’s a copycat, of course, and paleo-style. Put down your lime juice and cumin for this one, because all you’ll need is pork butt roast, ground black pepper, bay leaves, fresh thyme, and whole juniper berries.

9. Slow Cooker Carnitas Tacos
Use your favorite paleo tortillas to replace the corn tortillas in this recipe, and enjoy the unique and delicious flavors of these carnitas with orange, cinnamon, bay leaves, onion, hot pepper, oregano, and more. I love them topped with guacamole and some fresh cilantro.

10. Paleo Slow Cooker Beef Carnitas and Tostones
Carnitas are usually made with pork, but this recipe is for yummy beef carnitas with some of the same seasonings like chili, garlic, and cumin, along with unique additions like mustard powder. Don’t forget the crispy green plantain tostones to go with it!

11. Carnitas Soup
Complete with a recipe for the carnitas themselves, this carnitas soup is delicious with plenty of orange and lime juice, chicken broth or homemade bone broth, chili powder, diced onion, garlic, oil of choice (avocado would work well), bay leaves, and chipotle salsa (paleo-friendly, as many are).

12. Paleo Whole30 Carnitas
Just a few ingredients are needed to create a deliciously well-rounded flavor in this recipe. Gather your pork butt, orange zest and juice, onion, lime, coconut aminos, bone broth or water, salt, and oregano. The coconut aminos really up the level of umami flavor in this recipe.

13. Crock Pot Carnitas Lettuce Wraps
The cinnamon gives these carnitas a deliciously warm, spicy, sweet-savory hint that complements the onion, garlic, cumin, and other purely savory flavors. These are best served in lettuce wraps with chopped tomatoes and guacamole. So tasty and really easy, too.

14. Easy Duck Carnitas
You can make these carnitas with fresh duck legs, smoked paprika, Aleppo pepper or crushed red pepper, whole cumin seed, Mexican oregano, and a navel orange. The ingredient list is fairly simple as far as carnitas go, but the flavor profile couldn’t be farther from it!

15. Slow Cooker Carnitas Lettuce Wraps With Pineapple and Avocado Salsa
The contrast of cool and sweet pineapple, creamy and refreshing avocado, and hot, savory carnitas is a combination to be reckoned with. Red onion adds a spicy crunch while garlic, cumin, and oregano mix into a heavenly Mexican flavor combo you’ll want to eat every night.

16. Carnitas and Avocado-Plantain Rice With Tomatillo Salsa Verde
I don’t even know where to start with this recipe, because I can’t decide which is my favorite part! I’m pretty excited about the juicy carnitas, but would you just look at that awesome rice made from green plantains with avocado, fresh lime, and a yummy salsa!
