Paleo Cake – Need I Say More?
To start, you’re going to microwave your paleo approved dark chocolate chips in a microwave-safe cup in 15 second intervals until they’re melted. This will serve as the base for your cake, and there’s a reason why this recipe opts for dark chocolate. First and foremost, we want to keep this cake both sugar and dairy free. Secondly, dark chocolate is a fantastic source of both healthy fats and antioxidants. It also provides several benefits when it comes to your cardiovascular health, such as lowering blood pressure. Once your chocolate chips are melted, you can add in your vanilla extract, egg, honey, and melted coconut oil. All of these ingredients have been carefully chosen because they each pack a whole lot of value into your mug cake.
The vanilla extract helps to enhance the flavor of the cake, preventing it from tasting somewhat bland. The single egg helps to add structure to your cake when you cook it, along with providing more protein, healthy fat, and vitamins. Honey is a fantastic all natural sweetener that plays an important role in enhancing the flavor of the cake, helping to balance out the slightly bitter taste of the dark chocolate. And finally, the coconut oil makes a great butter replacement that also adds in some great medium chain triglyceride fatty acids to the recipe.
Next up, add in your coconut flour, baking powder, and raw cacao and whisk until everything is combined. Similarly to the dark chocolate, we use cacao because it’s a much healthier option than dairy milk chocolate. Raw organic cacao is an antioxidant powerhouse, and it’s an excellent source of essential minerals like calcium, magnesium, and iron. The majority of the cardiovascular and neuroprotective health benefits provided by cacao and cocoa are due to the methylxanthines (such as theobromine and caffeine) that they contain. (2)
The final step before you can enjoy your delicious dark chocolate mug cake is to place your cup in the microwave for 60-90 seconds. That’s how quick and easy it is to enjoy this truly decadent dessert. You can enjoy it plain or you can also top it with fresh strawberries if you’d like.
