- 1 ¼ cup halved multicolored cherry tomatoes
- ¼ cup homemade or store-bought paleo approved mayonnaise
- 1 tbsp fresh lemon juice
- 2 tsp chopped fresh dill
- ½ tsp. freshly ground black pepper
- salt to taste
- 2 cups chopped iceberg lettuce
- 4 bacon slices
- Heat a large nonstick pan over medium heat.
- Add the bacon slices and cook until crisp.
- Remove from the heat. Crumble into small pieces and leave to cool.
- In a large bowl place the tomatoes and lettuce and toss to combine.
- In another bowl whisk the mayonnaise, lemon juice, dill, salt and pepper.
- Add the mayonnaise mixture to tomato lettuce mixture and toss to coat.
- Sprinkle with crumbled bacon and serve immediately.
