When I was a kid growing up, I remember my parents would make the best stews and chili meals I had ever had with our humble crockpot. It’s a great way to save, too, as the slow-cooker will tenderize even the toughest cuts of meat, so you don’t have to spend so much on prime cuts. The recipe that I’m sharing today just might be the best slow cooked meal you’ll ever try, especially if you’re a fan of buffalo chicken. Personally, I’m partial to chicken wings but I’ll never say no to crockpot chicken. It’s just so tender and flavorful.
Paleo Hot Sauce is A Must
Slow cooked chicken goes hand in hand with a good sauce, and that’s exactly the case with this recipe as you’ll be cooking boneless skinless chicken breasts for about eight hours in an incredible sauce that is made with paleo approved hot sauce and a few other choice ingredients.
You’ll be adding the hot sauce to a small bowl and then mixing it together with some honey, garlic, dried parsley, dill, and chives along with salt and pepper. The hot sauce will be providing that classic hot buffalo flavoring while the herbs work to add an extra element of heat to the recipe. Parsley, dill, and chives all are widely regarded for their ability to not only add a lot of flavor to meals but also for their potent antioxidant content as well. (1)
Chicken So Tender, It Falls Apart
Once you have the sauce prepared and ready to go, it’s a simple matter of seasoning your chicken to your liking with a bit of salt and pepper before adding it to the slow cooker. Add the hot sauce mixture, toss it all together to ensure the chicken is coated, and let it sit for the eight hours. After this time period, you are going to want to remove the chicken and shred it using two forks. Next, return it to the slow cooker and toss it once again. You are going to end up with some unbelievably tender pieces of shredded chicken that are just bursting with flavor in every bite.
This is exactly the type of recipe that takes me back to my parents’ kitchen and my fond memories of family dinners growing up. It’s warm, hearty and full of nutrition and deliciously spicy hot flavor. This crockpot buffalo chicken is best served warm and with a side of either paleo-friendly bread, tortillas, or coleslaw.
Simple Homemade Paleo Coleslaw
I love making homemade paleo coleslaw whenever we have chicken wings or barbecues. It’s just so easy to prepare and helps me get rid of the vegetables in my crisper all at once. Simply dice or shred the vegetables, add in your paleo vinegar and paleo mayonnaise, and mix it all together.
- 2 pounds boneless, skinless chicken breasts
- 2 cloves garlic, minced
- ½ cup paleo approved hot sauce
- 2 tsp dried parsley
- 1 tsp dried dill
- 1 tsp dried chives
- ½ tsp black pepper
- 1 tsp salt
- 2 tsp honey
- In a small bowl combine the garlic, hot sauce, dried parsley, dill, chives, honey, black pepper and salt. Set aside.
- Season the chicken with salt and black pepper.
- Place the chicken in slow cooker.
- Add the hot sauce mixture and toss to coat.
- Cover with a lid and cook on low for 8 hours.
- Remove the chicken and shred with 2 forks.
- Return the shredded chicken to the slow cooker and toss to coat with the sauce.
- Serve warm with paleo bread or tortillas and your favorite coleslaw.
