Almond Flour Cookie Ice Cream Sandwiches (Paleo & Dairy-Free)

There are few things in life that are more enjoyable than ice cream sandwiches. This perfect marriage of ingredients combines crunchy cookies with soft and creamy ice cream that results in one of my all-time favorite desserts. The only thing that could possibly make it better is if you were able to make ice cream sandwiches that are paleo-friendly. Thankfully, that’s precisely what this cookie ice cream sandwich recipe accomplishes. It features delicious homemade chocolate banana ice cream that’s completely dairy-free along with paleo-friendly cookies that are also made entirely from scratch.

These homemade almond flour cookie ice cream sandwiches are like gold in my house! So good. Kids and husband love them.

Homemade Banana Ice Cream Is Even Better Than Dairy Ice Cream 

If you’ve recently switched over to following a paleo style diet and you’re already suffering from ice cream withdrawal, then banana ice cream is a blessing in disguise for you. Unlike regular ice cream which is laden with heavy cream, sugar, milk and other additives and flavorings, these homemade ice cream sandwiches won’t set off sugar cravings and cause blood sugar crashes. As an added bonus, it’s also lactose-free, so those who have a problem digesting lactose need not go through any gastric distress after having these.

Bananas possess several different antioxidant compounds that help protect your body against oxidative stress. (1) Not only that, but they are an excellent source of potassium, magnesium, and even provide a little bit of vitamin C as well. Bananas are also a great way to get more dietary fiber, which is important as some individuals who are new to the paleo diet are slightly deficient in fiber once they switch away from grains and other similar carb sources.

Making banana ice cream is incredibly simple as well. All you’ll need are two sliced frozen bananas, almond milk, some pure vanilla extract, and an ounce and a half of melted sugar and dairy-free paleo approved dark chocolate. Blend all of these ingredients together in a food processor until they have a smooth consistency and you’ve got some yummy banana ice cream ready to go.

What If I Don’t Have a Food Processor?

Don’t worry, you don’t need a food processor for this. You can use any countertop blender or hand blender to make ice cream out of your frozen bananas. Add liquids slowly rather than all at once to ensure that your ‘ice cream’ stays true to the consistency of regular ice cream. The presentation is still important, after all.

Paleo-Friendly Cookie Crust

You’ll also be making your own homemade cookie crust for these ice cream sandwiches. They’re just as easy to prepare as the banana ice cream but are incredibly flavorful thanks to the spices added. 

We have several cookie recipes that would also work great with this. This gingerbread one, for example, would work great for fall and winter. If you’re not a fan of crunchy cookies, this chewy paleo fig newton cookie would be delicious in ice cream sandwiches as well. 

Putting It All Together

Once you’ve got your cookie crusts and banana ice cream ready, simply place a single small scoop of ice cream in between two cookies and press them down to make your ice cream sandwiches. 

The key to preparing a good ice cream sandwich is waiting for your cookies to cool completely. Don’t take them out of the oven and put the ice cream on right away or you’ll end up with a soggy mess.

For cookies
  1. 2 cups almond flour
  2. 4 tbsp melted coconut oil
  3. 3 tbsp honey
  4. ¼ tsp baking soda
  5. ¼ tsp apple cider vinegar
For ice cream
  1. 2 bananas, sliced and frozen
  2. 2 tbsp almond milk
  3. ½ tsp pure vanilla extract
  4. 1 ½ oz sugar free, dairy free paleo approved dark chocolate, melted
Instructions
  1. Preheat oven to 325 F. Line a baking sheet with parchment paper. Set aside.
  2. To make the cookies, place all the ingredients in a bowl and mix to combine.
  3. Spoon 1 tablespoon of the batter onto the baking sheet for each cookie.
  4. Bake for 12-15 minutes.
  5. Remove from the oven and let cool completely.
  6. To make the ice cream, place all the ingredients in a food processor and blend until smooth.
  7. Place 1 small scoop of ice cream in between two cookies and press down.
  8. Repeat to make 7 more sandwiches.
  9. Freeze until ready to serve.
