- 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
- 2 red bell peppers, cut into 1 inch pieces
- 2 zucchinis, cut into ¼ inch thick rounds
- 1 tbsp olive oil
- 1 cup full fat coconut milk
- 2 garlic cloves, minced
- ½ inch fresh ginger, peeled and grated
- ½ tsp ground cinnamon
- ½ tsp ground coriander
- 1 tbsp smoked paprika
- 2 tsp turmeric
- ½ tsp ground cumin
- 1 tsp garam masala
- ½ tsp black pepper
- ½ tsp salt
- ½ lemon, juiced
- To make the marinade combine all the ingredients in a large bowl.
- Add chopped chicken, stir well and cover with plastic wrap. Refrigerate for 2-3 hours.
- Soak the skewers in water and set aside.
- Remove the chicken from the refrigerator 30 minutes before cooking.
- Remove the skewers from water.
- Thread chicken, red bell peppers and zucchini alternately onto the skewers.
- Preheat a grill pan to high heat.
- Oil the grill pan with olive oil, then place the skewers on it.
- Grill the skewers 15-20 minutes, and turn them occasionally.
- Serve the skewers with your favorite salad.
