Ingredients
  1. 1 pound sweet potato, peeled
  2. 2 eggs, beaten
  3. 2 tbsp olive oil, plus extra for greasing
  4. ¼ tsp garlic powder
  5. ¼ tsp chili flakes
  6. 3 tbsp chopped fresh chives, plus extra for decoration
  7. Salt to taste
Instructions
  1. Spiralize sweet potatoes into noodles.
  2. Preheat 2 tablespoon olive oil in a large skillet over medium heat.
  3. Add sweet potato noodles and stir.
  4. Cover and cook for 5 minutes, stirring occasionally, until noodles are soft.
  5. Remove from the heat.
  6. In a large bowl, add noodles, eggs, garlic powder, chili flakes, and chive.
  7. Season with salt to taste.
  8. Stir well.
  9. Preheat waffle iron and coat it with oil.
  10. Ladle half of the mixture and cook 10-15 minutes, or until golden and crispy.
  11. Repeat with the rest of the mixture.
  12. Sprinkle with extra chopped chive.
  13. Top with desired toppings and serve.
