We’ve got a frozen chocolate covered cheesecake bites with raspberries recipe for you that’s absolutely to die for. Skipping all of the sugar and dairy products usually found in cheesecake, the healthy filling for these bites is instead made with soaked raw cashews, coconut oil, honey, almond milk and vanilla extract. We’ve chosen raspberries to use in this recipe but they can easily be replaced with another option like strawberries or blueberries if you’d like.
The Perfect “Cheesecake”
Instead of being filled with traditional cheesecake, these delicious frozen bites use a homemade filling that is just as good, if not better. Where cheesecake is usually made with sugar, eggs, and cream cheese, we’ve instead decided to blend together a variety of healthy ingredients that end up matching the texture of cheesecake while offering a pleasant vanilla, nutty flavor. We’re big fans of coming up with paleo-friendly cheesecake replacements and this one ended up being one of our favorites so far.
Delicious Paleo Dessert Ingredients
1. Dairy Free Dark Chocolate
The outer coating of these cheesecake bites is made using melted sugar and dairy free dark chocolate. Not only is dark chocolate a great source of healthy fats, it’s also rich in antioxidants and helps to improve blood flow. (1) While dark chocolate has a much more bitter taste than milk chocolate, it combines perfectly with the “cheesecake” filling used in this recipe. You could add a splash of homemade almond milk or even coconut milk to make it less bitter.
2. Cashew Nuts
Just like dark chocolate, the cashew nuts used in the filling are loaded with heart healthy monounsaturated fats. They’re also full of essential vitamins, minerals and antioxidants. Soaking the cashews allows the nutrients found within them to become more bioavailable while improving their digestibility. (2)

The filling also makes use of coconut oil. Coconut oil is an excellent source of medium chain triglycerides, a type of easy to digest fatty acid that may help to keep your heart healthy. (3). Many people tend to shy away from coconut oil due to the high saturated fat content, but it’s important to understand that not all saturated fats are bad for you. The lauric acid found in coconut oil actually helps to improve your overall cholesterol levels despite the fact it’s high in saturated fats.
4. Raw Honey
The filling calls for the use of honey, preferably raw honey. Raw honey is another one of nature’s superfoods and contains up to 80 different nutrients with numerous health benefits. Raw honey is not as sweet as table sugar or artificial sweeteners, so you may need a little more than usual to achieve your desired level of sweetness.

After lining an ice cube tray with melted dark chocolate, you simply add the blended filling into each ice cube mold along with a single raspberry. - 10 oz melted dairy free, sugar free, paleo approved dark chocolate
- ½ cup raw cashews, soaked
- ¼ cup coconut oil plus extra fro greasing
- 3 tbsp honey
- 2 tbsp almond milk
- 1 tsp pure vanilla extract
- frozen raspberries
- To make the filling place the soaked cashew nuts, coconut oil, honey, almond milk and pure vanilla extract in a blender and blend until smooth.
- Grease an ice cube tray with extra coconut oil.
- Using a spoon pour the melted chocolate into each ice cube mold.
- Coat the bottom and the sides of each ice cube mold using your spoon.
- Place in a freezer for 30 minutes.
- Fill each ice cube mould with the filing.
- Add 1 frozen raspberry in each ice cube mould and top with melted chocolate.
- Return the ice cube tray in the freezer for minimum 4 hours.
- Remove from the freezer 5 minutes before serving.
- Carefully pop the cheesecake bites out of the ice cube tray and serve.
