Dark Chocolate Dipped Raspberry Coconut Popsicles

Looking for a tasty treat to help you cool off during the warm summer months? This coconut raspberry popsicle recipe is perfect then. Made using all natural ingredients like frozen raspberries, coconut milk, and honey, these popsicles will be a huge hit with kids while also making for a healthy snack for adults as well. Coconut popsicles make for a great snack on their own, but you can really take them to the next level by adding melted dark chocolate, pistachio and shredded coconut for even more delectable flavoring and decoration.

These dark chocolate dipped coconut popsicles are refreshing and rich at the same time! The perfect combination of cool, tart raspberry with bitter, deep dark chocolate. YUM.

Real Fruit Popsicles

This specific recipe calls for raspberries to be used, but feel free to replace them with any type of frozen fruit that you would prefer. Strawberries, peaches, or even watermelon can make for great alternatives. We love using raspberries though because they’re low in calories but packed with nutrients and fiber. 

Raspberries – Nature’s Candy

Raspberries are commonly referred to as “nature’s candy” and they can actually come in a wide variety of different colors. Most people tend to think of red and black raspberries, but they can also be found in yellow and purple colors as well. No matter which color of raspberry that you enjoy though, they all offer some great benefits for your health.

They are an excellent source of vitamin C while also being loaded with berry flavonoids like anthocyanins, a type of antioxidant polyphenol that has been shown to have a positive impact on your cardiovascular health while also helping to protect against certain cancers. (1,2) Berries have also been shown to help boost cognitive function, improve digestion, and can help support your liver with your body’s natural detoxification function.

Coconut – A Tropical Twist

In addition to using frozen raspberries, this recipe calls for one cup of full-fat coconut milk. Not only does this add some great healthy saturated fats to the popsicles, which makes them a nice satiating treat, but it gives them a lovely hint of coconut flavor.

Ingredients
  1. 3 cups frozen raspberries
  2. 1 cup full fat coconut milk
  3. ¼ cup honey
  4. 3 oz dairy free, sugar free, paleo approved dark chocolate, melted
For decoration (optional)
  1. 1 tbsp chopped pistachio
  2. 1 tbsp unsweetened finely shredded coconut
Instructions
  1. In a blender, combine coconut milk, raspberries, honey, and blend until smooth.
  2. Pour the mixture into popsicle molds, insert the sticks, and freeze until solid, 3-4 hours.
  3. Gently remove popsicles from the molds (if needed hold the molds briefly under hot running water), drizzle or dip in melted chocolate and sprinkle with chopped pistachio and shredded coconut (if using).
  4. Place the popsicles on a tray lined with parchment paper and freeze for half an hour before serving.
