It’s also ideal for anybody who is sensitive to gluten, making this cloud bread something that everyone can enjoy.

- 3 eggs, separated
- 1/3 cup cashew nuts, soaked minimum 2 hours
- ¼ tsp apple cider vinegar
- ¼ tsp baking soda
- ¼ tsp salt
- Preheat oven to 350 ºF. Line a baking sheet with parchment paper. Set aside. Place the egg whites, apple cider vinegar and pinch of salt in a large bowl. Using electric beaters, whisk the egg whites to stiff peaks. Set aside. Place the egg yolks, soaked cashew nuts, salt and baking soda in a blender and blend until smooth.
- Transfer the mixture in another bowl. Gently fold the egg whites into the yolk mixture, working in batches. Carefully dollop the mixture onto the prepared baking sheet. Bake in the middle of the oven for 20 minutes or until golden brown. Remove from the oven, cool slightly and use to make your favorite sandwich.
