There are few things in life that are better than the smell of freshly baked bread. That said, there is one downside to eating bread and that is its high carbohydrate content. It wouldn’t be so much of a problem if the ingredients were all-natural and paleo, however, most types of bread are not. That’s precisely why I wanted to share this great paleo cloud bread recipe with you guys today. Not only is it a great low carb bread option, but it’s also incredibly simple to make and high in protein as well. Using simple ingredients (eggs, soaked cashews, apple cider vinegar, baking soda, and salt – seriously, that’s it!), this cloud bread recipe is soft and chewy and oh so good when it’s fresh out of the oven. It’s also ideal for anybody who is sensitive to gluten, making this cloud bread something that everyone can enjoy.

This is the best low carb bread for pretty much anything! Love it. Great for paleo sandwiches, as a snack or to satisfy your bread cravings. Definitely a keeper!

Soft, Chewy, But Low in Carbs

When cloud bread first comes out of the oven, it’s got a texture that’s almost like meringue. As it begins to cool off, however, it becomes deliciously soft and chewy, just like normal freshly baked bread. It’s no secret that I love to use cashews in all kinds of different paleo recipes, so it should come as no surprise that they make an appearance in this cloud bread recipe. By using soaked cashews, you can make sure that you are getting rid of the enzyme that hinders the absorption of other nutrients. And wow, is this cloud bread loaded with nutrients from not only the cashews, but the eggs and apple cider vinegar as well.

All of the simple ingredients add up to make a delicious cloud bread that’s high in protein, vitamins, minerals, and a balanced mix of both saturated and monounsaturated fats. If you’re trying to keep your calories and carb intake under control, this recipe is perfect for you. Paleo cloud bread can be enjoyed all by itself or used to make your favorite type of sandwich.

This paleo cloud bread is perfect for anyone looking for a healthy, low carb way in which to still enjoy eating their favorite sandwiches. If you’re looking to mix it up a little bit as well, you could even add your favorite herbs and spices into the mixture. Adding a bit of cinnamon or smoked paprika into the recipe would end up making some very tasty cloud bread indeed! As you can clearly see, going paleo doesn’t mean you have to give up enjoying bread and sandwiches. In fact, you might even end up preferring cloud bread from here on out for making all of your favorite sandwiches.

Ingredients
  1. 3 eggs, separated
  2. 1/3 cup cashew nuts, soaked minimum 2 hours
  3. ¼ tsp apple cider vinegar
  4. ¼ tsp baking soda
  5. ¼ tsp salt
Instructions
  1. Preheat oven to 350 ºF. Line a baking sheet with parchment paper. Set aside. 
Place the egg whites, apple cider vinegar and pinch of salt in a large bowl. Using electric beaters, whisk the egg whites to stiff peaks. Set aside. 
Place the egg yolks, soaked cashew nuts, salt and baking soda in a blender and blend until smooth.
  2. Transfer the mixture in another bowl. 
Gently fold the egg whites into the yolk mixture, working in batches.
Carefully dollop the mixture onto the prepared baking sheet. 
Bake in the middle of the oven for 20 minutes or until golden brown.
Remove from the oven, cool slightly and use to make your favorite sandwich.
