There are lots of reasons you might decide to go raw for awhile. Whatever the reason, I’ve found these amazing paleo raw recipes for you to try—everything from desserts to salads. Keep in mind that you may have to adjust the ingredients depending on how “strict” you are with your raw rules.

If you’re looking for uncooked recipes, maple syrup may be fine. But since it’s been heated, some raw foodies will want to replace it with raw honey. It’s up to you! Enjoy these recipes and maybe you’ll find a favorite.

1. Easy 10 Minute Raw Banana Nut Pie
This super-easy pie is made with mixed nuts (whatever you like), Medjool dates, ripe bananas, raw cacao powder, sea salt, maple syrup or honey (use raw honey if you’re going strictly raw), and a handful of raw cacao nibs. It’s a sweet and yummy treat that won’t give you a sugar crash.

2. Raw Mint Slice Bites
This little slices remind me a little bit of Peppermint Patties in flavor, but without the corn syrup and preservatives. Woohoo! You’ll need to make one small adjustment—replace the rice malt syrup with a mild-tasting raw honey (and maybe cut it back since honey is sweeter).

3. Sweet and Spicy Strawberry Salsa
I love fruit salsas, and strawberry is one of my personal favorites. You’ll need fresh strawberries (the sweeter, the better), red onion, chili pepper, fresh coriander leaves, and a squeeze of fresh lime juice. Sprinkle with salt and pepper to taste, and wait to add the lime until you’re ready to serve it.

4. Raw White Chocolate and Pumpkin Cheesecake
Believe it or not, homemade raw cheesecake can be even smoother and creamier than the real thing. I’m not kidding! The secret is soaked cashews, and in this recipe, raw cacao butter. If you’re avoid maple syrup since it’s been heated, use raw honey instead.

5. Raw Pad Thai With Spicy Almond Sauce
This totally raw pad Thai is full of flavor from almond butter, lime juice, fresh ginger, clove, sriracha, cilantro, and other ingredients. It’s packed with vegetables so you know you’re getting a wholesome and nourishing meal with all of its enzymes still intact.

Coconut Cacao Paleo Protein Bars

6. Coconut Cacao Paleo Protein Bars
Gelatin might not be allowed on strict raw diets (because it’s been heated, and because many of those diets are based on vegan principles), but if you eat gelatin, you can enjoy these fantastic protein bars that’ll send lots of nutrients to your hait, skin, nails, and gut.

7. No Bake Berry Fudge
This fudge is awesome, and it’s full of nourishing ingredients. You’ll need berries, almonds, coconut oil, butter, vanilla, raw honey, nut butter, and shredded coconut. Store this in the freezer and treat yourself to a little bit each day. This is especially good in summer time!

8. Vegan Cheesecake With Tropical Topping
This cheesecake is silky and soft with a lovely vanilla flavor enhanced with a touch of sea salt and ground cardamom. The caramel base is made with dates and shredded coconut, and the tropical topping is pure mango and strawberries, so it’s sweet and purely fruity.

9. Easy Raw Caramel Apples
I love these caramel apples because they’re made with dates, vanilla, and coconut milk as the caramel instead of those gross corn syrup “wraps” you can buy at the store. Is there anything real in those? I don’t know, but I do know that these raw caramel apples are nothing BUT real.

10. Wholesome Vegan Pumpkin Cheesecake
Make this recipe and you’ll have an awesome Thanksgiving or Christmas dessert! It’s made with ingredients like ginger, maple syrup (use raw honey if necessary), pecans, coconut flakes, vanilla, dates, cashews, and coconut butter. The coconut butter makes it so creamy!

11. Brussels Sprouts Slaw With Cabbage and Apples
This easy Brussels sprouts slaw is made with shredded sprouts, red cabbage, granny smith apples, walnuts, and a lovely lemon-Dijon vinaigrette. The dressing uses honey and ginger, and it’s a recipe you’re going to want to keep on hands for the salads of your future.

12. DIY Pink Sports Drink
This homemade electrolyte replacing drink is excellent for keeping hydrated in the summer, during sports, or even just when you’re sick and the doctor tells you to drink Gatorade (which still baffles me every time I hear it!). It’s made with coconut water, beets, lemon, salt, and more.

13. Peppermint Hearts
These candies can be enjoyed with or without the chocolate sauce, so decide how you want to make them and adjust the instructions accordingly. They’re super tasty and practically melt in your mouth! I can’t wait to share these with my family over the holidays.

14. Pear, Spinach, and Fresh Tarragon Juice
This easy green juice is great for your digestion, and has a nice sweet and savory flavor with fresh and juicy pears, healthy and nutrient-rich spinach, fresh tarragon, and lemon juice. It’s also very hydrating if you’re trying to replace fluids and nutrients after and illness.

15. Maple Cashew Coconut Fudge Squares
These raw fudge squares would make lovely holiday gifts for your friends and family…if you can stop yourself from eating them all first! They have a double layered effect with a cashew layer and a coconut layer, both sweetened with maple and flavored with vanilla.

16. Raw Paleo Snickers Bar
Missing your Snickers? Need to cure a craving? Try just one of these little bars and you’ll be hooked (for better or for worse). Luckily, they’re made with healthier ingredients like cashews, coconut oil, maple syrup (or honey) dates, and other nutrient-dense ingredients.

17. Cinnamon Carob Pecan Candies
I absolutely love pecan butter—I think I could eat it all day long. I could also eat these candies all day long, because they’re made from carob powder (or raw cacao if you’d rather), cinnamon, vanilla, pecan butter, sea salt, and a bit of stevia to sweeten them.

Sparkling Apple Pear Cider

18. Sparkling Apple Pear Cider
This yummy cider has an extra complex flavor from the addition of pears, which also helps round out the sweetness. All you’ll need to make this cider is apples, pears, a juice, and some sparkling water. Maybe add a few dashes of cinnamon if you’re feeling spicy.

19. Raw Blackberry Cheesecake
Blackberries were born to become cheesecake, if you ask me. This recipe has a chocolate base made from almond flour, cocoa powder, and coconut oil with hints of vanilla and sea salt. The cheesecake layer is made from cashews, and the top is swirled with delicious blackberry syrup.

20. Caramel Nice Cream Sundae With Rawnola and Maple
Intrigued? You should be. This totally fantastic recipe is made with bananas, mesquite powder, cinnamon, coconut sugar, maple syrup (or honey), and dates. For the rawnola, replace the rolled oats with finely-chopped almonds. I know what I’m making for dessert tonight!

21. Zucchini Hummus
This hummus recipe is fabulous and tastes amazing. It’s also full of veggies and healthy fats! To make it, get your hands on some zucchini, avocado, tahini, lemon juice, olive oil, fresh ginger, garlic, salt, and if you’re looking for a little heat, a pinch of cayenne pepper.

22. Springtime Zucchini Noodles With Garden Greens Pesto
This raw lunch or dinner recipe really is perfect for spring or summer with its bright flavors and colors. You’ll need basil, leafy greens, cashews, garlic, lemon juice, nutritional yeast, salt and pepper, and olive oil. And don’t forget the zucchini and your spiralizer!

23. Raw Harissa
This raw harissa can be used as a dip, a sauce, a marinade, or anything else you like, and you don’t need to do any cooking to make it! You’ll need fresh red chili peppers, ground cumin, coriander, caraway, sea salt flakes, garlic, fresh cilantro, lemon juice, and olive oil.

24. Raw Mint Chocolate Layer Cakes
I love these little layer cakes with their bright mint flavor and deep, sweet, smooth chocolate. There are three layers: a crunchy-chewy base layer, a pepper filling (use honey if necessary), and a chocolate topping that’s like a rich and creamy gananche.

25. Mint and Lime Infused Mango Sorbet
This mango sorbet is sweet and tart with hints of mint. You can add a little bit of stevia liquid if you need to make it a bit sweeter (it all depends on the ripeness of your mango). I love how creamy this sorbet is without any dairy or coconut milk!

Orange Pineapple Banana Smoothie

26. Orange Pineapple Banana Smoothie
I do love my green smoothies, but sometimes I just want a simple, sunny smoothie that doesn’t have greens. This is one of my favorites with its sweet and tangy flavor, made from nothing but frozen pineapple, banana, and oranges. For extra fun, add a touch of vanilla extract.

27. Marbled Matcha-Lemon Raw Cheesecake
This cheesecake has a pretty color and a unique flavor from matcha green tea and lemon. You’ll need almond butter, coconut sugar, unsweetened shredded coconut, cashews, almond milk, lemon zest, vanilla, and other flavor ingredients. So go get your swirl on!

28. Raw 3 Ingredient Snack Bars
These easy snack bars are made with only nuts, Medjool dates, and cacao powder. They’re sweet and chocolately, and you can use whatever nuts and seeds you like. I’d go with cashews, but that’s just me. You could even make them nut-free by just using sunflower seeds or pepitas!

29. Raw Vegan Cookie Dough and Berry Bars
You can make these bars with whatever berries you like, and you can change up the nuts, too. They have an awesome cookie dough flavor from vanilla and maple syrup (or honey). If you’re serving a strict raw foodie, you may need to leave off the chocolate, but this blogger says the bars are awesome without it, too.
