9 Paleo Leftover Turkey Recipes

After Thanksgiving, many of us have leftover turkey that’s begging to be turned into something. If you’re bored of turkey sandwiches, or you’re looking for a healthier paleo-friendly alternative, you’ve come to the right place. Check out these awesome leftover turkey recipes and give a few of them a try this year.

When I’m looking for ways to use up that leftover turkey from the holidays, I turn to these recipes that use leftover turkey as the main ingredient. Dinner’s done!


1. Turkey Pot Pie
Why not? Turkey makes a lovely alternative to chicken in this pot pie recipe that features a coconut flour biscuit topping and a filling with butter, onion, celery, green beans, turkey, and silky coconut milk (to replace the heavy cream). You could also try gelatin (added appropriately) in place of the xanthan gum.

2. Turkey, Cranberry, and Walnut Lettuce Wraps
Turkey sandwiches are the traditional leftover turkey lunch from most people’s Thanksgiving memories. But instead of making a traditional turkey sandwich with bread, you could try this lettuce wrap with paleo mayonnaise, cranberries, grapes, persimmons, celery, and more.

3. Turkey and Roasted Sweet Potato Spinach Salad
This salad is a light and refreshing way to enjoy your leftover turkey with nutrient-rich spinach, delicious sweet potatoes, and a sweet and tart cranberry vinaigrette dressing made with white wine vinegar and maple syrup.

4. Turkey Stuffed Peppers
This southwestern style dish uses poblano or pasilla peppers, shredded leftover turkey (or chicken), salsa verde, and cilantro. The recipe calls for goat cheese, but you could certainly leave it out if you wish. This one’s going on my own recipe list!

5. Paleo Thanksgiving For Two
You don’t have to reserve this recipe for the official turkey day. If you’ve got some leftover turkey in the fridge, get to work any time of year with acorn squash, celery seed, rosemary, cranberries, apple, onion, egg, and poultry seasoning. Super simple and delicious.

6. Easy Leftover Turkey Salad With Creamy Orange Poppy Dressing
This salad is excellent for winter, because many of us could use a little nutritional boost during the time of year when we’re eating the creamiest and least-green foods. This salad isn’t hot, but it’s packed with comfort foods like turkey and raisins, and it’s topped with a deliciously creamy orange dressing.

7. Thai Coconut Turkey Soup
This amazing soup is made with onion, shiitake mushrooms, ginger, garlic, shredded turkey, cherry tomatoes, stock, coconut milk, Thai green curry paste, sprouts, bell pepper, sriracha, and coconut aminos (as a substitute for the soy sauce). It’s hot a flavorful and perfect for chilly weather, too.

8. Turkey and Sweet Potato Hash
A good old hash is probably the simplest way to use up your leftover turkey, but that doesn’t make it any less tasty. Dice up your cooked turkey meat and combine it with bacon, bacon fat, ghee, red pepper flakes, mustard greens, sweet potatoes, and red onion. Enjoy for any meal!

9. Paleo Turkey and Vegetable Soup
Everyone loves a good soup, and for most of us, we’ve got a lot of leftover turkey during the beginning (or middle) of soup season. Try this recipe with shredded turkey, celery, carrots, yam or sweet potato, onion, garlic, parsley, and broth.
